<p>Last week while craving a bulgar salad, I found myself with no tomatoes, cucumbers, or peppers in my fridge. Luckily I had fresh mint and parsley. So I tried something different. Since I love the sweetness of tomatoes in my salad but didn&#8217;t have any, I thought maybe strawberries would be a good substitute. Turns out I was right. It was fabulous! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>I also added some <a href="http://kemalandsheila.com/2010/07/ajvar-roasted-peppers-and-eggplant-spread-how-to-make-and-preserve-it/">ajvar</a> and pomegranate molasses.</p>
<p>This salad was the perfect way to begin my morning. It gave me a lot of energy, and the fresh parsley and mint revitalized me.</p>

			<content:encoded><![CDATA[<p>The other day I was almost drooling over some pictures of some iced almond cookies I saw on <a href="http://www.whatkatiesbaking.com/2011/04/comments-white-chocolate-frosted-almond.html">What Katie&#8217;s Baking</a>. I wanted to bake some, but I wasn&#8217;t sure how to make an icing for the cookies that didn&#8217;t use processed sugar.</p>
<p>Katie was kind enough to do a little online research and found a raw frosting recipe for me at <a href="http://www.cupcakeproject.com/2008/07/raw-food-frosting-recipe-use-coconut.html">Cupcake Project</a>. The icing is made with raw agave nectar, and I was thrilled that Katie found the recipe for me because I could make some yummy cookies without using processed sugar.</p>
<p>Anyway, this morning I made both iced almond cookies and iced lemon cookies,</p>

<p>using the recipe I found on <a href="http://www.whatkatiesbaking.com/2011/04/comments-white-chocolate-frosted-almond.html">Katie&#8217;s website</a>. (By the way, she found this recipe at <a href="http://www.tasteofhome.com/Recipes/Almond-Sugar-Cookies-2">Taste of Home</a>.) When I made the lemon cookies, I used lemon juice and lemon zest instead of almond extract.</p>
<p>I made a small batch (about a half dozen of each kind) of both the almond cookies and the lemon cookies,</p>

<p>using <a href="http://coconutsecret.com/crystals2.html">raw coconut sap</a> instead of sugar. I have to tell you the cookies turned out great! I was kind of nervous about it because I&#8217;m not very good at making cookies, so I was relieved when I pulled them out of the oven and they were perfect! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>I also made two small batches of icing for my cookies. For the lemon cookies, I followed the <a href="http://www.cupcakeproject.com/2008/07/raw-food-frosting-recipe-use-coconut.html">raw food frosting recipe found on Cupcake Project</a> exactly as shown (just made a smaller batch and added a few drops of yellow food coloring). For the almond icing, I used almond extract instead of lemon juice and lemon rind, and I also added a few drops of purple food coloring. I also added some little sprinkles to some of them. I couldn&#8217;t resist! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[I love chamomile tea with lemon, and when I found <a href="http://www.eatingclubvancouver.com/2009/05/lemon-chamomile-tiramisu.html">this recipe</a> online for a lemon chamomile tiramisu, I knew I had to try it. I had also seen a <a href="http://www.youtube.com/watch?v=5jJ1pYVrCl0&amp;playnext_from=TL&amp;videos=P6Kk1XPezxM&amp;playnext=1">video</a> that gave some easy step-by-step instructions on how to make Limoncello so I decided to make my own for this particular cake.</p>
<p>Waiting one month for the Limoncello to be ready made my anticipation for trying this cake even more heightened than it already was, and when I finally got to make it last night, I was hardly waiting for the tiramisu to chill so I could finally sit down and enjoy it.</p>
<p>It was well worth the wait though. Every lemony bite was luscious and luxurious. It was a light dessert though rich in flavor. Kemal loved it as much as I did, and while we were sharing a piece last night, I was humming while enjoying the exquisite flavors of this creamy dessert.</p>

<p>While we could feel the vodka a little, it wasn&#8217;t overpowering, and while I would prefer a stronger liquor flavor, Kemal said for him it was perfect. The chamomile flavor was ever-so-subtle and barely detectable on my tongue. I wanted the chamomile to make its presence known more, but Kemal said the hints of chamomile flavor that came through was just perfect. I guess we all have different tastes, so when you make it, you can add more Limoncello and more chamomile if you want those flavors to be a little stronger.</p>
<p>This tiramisu is very easy to make, and if you make your candied lemon peels the day before you make the cake, that will certainly enable you to put this tiramisu together fairly quickly once you get started. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>They&#8217;re light; you can eat one without feeling heavy. They&#8217;re sweet, but not too sweet. And they&#8217;re lemony without being too tart. <p>Now I guess you noticed by now that my Valentine cakes are heart-shaped but they&#8217;re not pink or red the way they probably should be. What can I say? <p>Alrighty, before getting started, let me just suggest that if you want to decorate your cake with the candied lemon peel, I&#8217;d recommend doing that step the night before you make the cake. Then in the morning you can get up and finish the rest. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  How much candied lemon peel you make is really up to you.It just depends on how much you want to garnish your cakes with. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I used this stack (the peels from one lemon) to garnish my cakes:

<p><strong>How to make a &#8220;dump cake&#8221; with the leftover cake scraps, lemon filling, and whipped cream topping:</strong></p>
<p>Now that you&#8217;ve finished your Valentine cakes, you&#8217;ll notice you have leftover cake scraps, filling, and whipped cream. A really easy way to put those leftovers to use is to make a &#8220;dump cake.&#8221; If you&#8217;ve never made one before, a dump cake is just basically a cake that&#8217;s put together by dumping the ingredients into a pan. I took my dump cake, as well as some Valentine cakes, to work, and everything was gone in minutes. My co-workers seemed to really enjoy it. I would show you a picture except I didn&#8217;t have time to photograph it. I barely finished making the cakes before it was time to go to work. I photographed the Valentine cakes that I saved for me and Kemal when we got home from work. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Okay, you&#8217;ll need just a few more minutes to make your dump cake. Ready?</p>
<ol>
<li>Find a serving dish that will hold your leftovers.</li>
<li>Take all your leftover cake pieces and break them apart onto the bottom of your serving dish.</li>
<li>Pour the leftover lemon filling onto the cake pieces and then spread it evenly.</li>
<li>Now spread the whipped cream on top of the lemon filling.</li>
<li>If you have any leftover candied lemon peels, decorate the top of your dump cake with that. I didn&#8217;t have any left over so I just sprinkled the top of my dump cake with multi-colored sugar crystals and candies. It looked like a festive Easter cake and tasted great!</li>

<p>Yesterday, Kemal bought me a cake pan mold which makes little individual torte-shaped cakes like what you see here:</p>

<p>They&#8217;re just so darned cute, and they taste oh-so-lemony. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  You can make the cake in any kind of cake pan&#8230;doesn&#8217;t have to be a molded one like this what we used.</p>

<p>You can also make the glaze sweeter. While we really like the cake just as it is, Kemal and I both think the glaze could maybe be a bit sweeter. Next time we might make our glaze with some sugar added to the honey and water.

			<content:encoded><![CDATA[A month or two ago when my friend, Vesna, and I were talking on Skype, she showed me a piece of cake that was made by one of her friends. She told me it was very delicious and told me how to make it if I wanted. Even more interesting than the cake itself is the story behind it.</p>
<p>During the civil war in the former Yugoslavia, people&#8217;s lives changed drastically in many ways. One way their lives changed had to do with food and meals. Food availability was limited, and so every meal was pretty much the same. Bread, butter, and jam does give the body some energy and can help ease hunger pangs, but the body craves a variety of food. If you go for a long period of time without fruits, vegetables, and proteins, not only does the body suffer, but the spirit can suffer as well.</p>
<p>Well, to continue the story, one day a lady was walking along the beach and found a few lemons. Of course she was excited to find the fruit, and I&#8217;m sure she must have thought long and hard about how to share it with everyone. In the end, she used both the juice and peel of the fruit to make a cake which lifted everyone&#8217;s spirits. The resulting cake is called war cake.</p>
<p>This is an excellent cake to make and share at Christmas or Thanksgiving. It&#8217;s simple but delicious, and the story behind it is one that helps remind us to be grateful and thankful for all we have. Perhaps this cake also embodies the spirit of Thanksgiving, reminding us to give thanks, not only for all the food on our tables, but also for living in a country which is not ravished by war and the effects of war. This War Cake helps remind us of all we really have to be thankful and grateful for.</p>

<p><em><strong>War Cake (Lemon Roll Cake with Jam)</strong></em></p>
<p><strong>Yield:</strong> Makes 3 jelly rolls</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>4 sticks unsalted butter, softened</li>
<li>2 eggs</li>
<li>2 cups sugar</li>
<li>4 lemons</li>
<li>1 tbsp. sour cream (or can substitute with buttermilk)</li>
<li>1 tsp. baking powder</li>
<li>5 1/2 cups all purpose flour</li>
<li>jam of your choice (I used peach preserves)</li>
<li>confectioner&#8217;s sugar (for sprinkling)</li>
</ul>
<p><strong>Instructions:</strong></p>
<ul>
<li>Preheat the oven to 350 degrees.</li>
<li>Grate the lemon peel  off all four lemons.</li>
<li>Then cut the lemons into pieces and squeeze all the lemon juice into a small cup.</li>
<li>Cream the butter and sugar together.</li>
<li>Add the lemon peel, lemon juice, eggs, baking powder, and buttermilk, and stir well.</li>
<li>Stir in the flour, a little at a time.</li>
<li>Lay a large piece of parchment paper onto your counter top.</li>
<li>Divide the dough into three pieces and roll them into balls.</li>
<li>Place a dough ball on the parchment paper.</li>
<li>Now tear off another piece of parchment paper and place it on top of the dough.</li>
<li>Flatten the dough with your rolling pin, taking care not to roll it too thin.</li>
<li>Spread the jam evenly over the dough.</li>
<li>Now start at one end of the dough and roll it until the entire dough is rolled (like a jelly roll).</li>
<li>Repeat the process with the other two dough balls.</li>
<li>Bake until the dough is cooked. You&#8217;ll know it&#8217;s done when you insert a toothpick and it comes out clean.</li>
<li>After the dough is done, remove the cakes from the oven and sprinkle with confectioner&#8217;s sugar.</li>
<li>Slice the cakes after they&#8217;ve cooled.</li>
</ul>
<p><strong>Baking Notes:</strong> The flavor of the cake was lemony and tasted great! While I enjoyed it warm from the oven, I liked it even better after they sat overnight in the refrigerator. The texture of the cake was just a bit dry and crumbly. The cake actually turned out more like the texture of a cookie than a cake, and after I cut the rolls, the pieces reminded me of cookie bars. The flavor of the lemon was wonderful, especially combined with the peach preserves. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  This cake holds up for a long time and tastes even better the longer it sits on my counter. I&#8217;ve been keeping it covered with plastic wrap so it stays fresh, and the flavors seem to intensify and the cake becomes softer as the days go by.
