<p>When you&#8217;re making them, just stack them on a plate or cutting board. They will cool quickly so if you want to keep warm, wrap them in a clean kitchen towel.</p>
<p>By the way, I photographed them on one of the beautiful cutting boards my Dad made for me for my birthday.</p>

			<content:encoded><![CDATA[There are so many different ways to make stuffed breads, and this Mediterranean stuffed bread that I made is adapted from a Tunisian bread recipe that I found online (<a href="http://breadbasketcase.blogspot.com/2009/02/tunisian-spicy-breads-touarits.html">www.breadbasket.com</a>). I stuffed the bread with <a href="http://en.wikipedia.org/wiki/Ajvar">ajvar</a>, which is basically like a roasted red pepper and eggplant salsa/relish, that is very popular in the Balkans. It&#8217;s also Kemal&#8217;s favorite bread spread, so I figured he would enjoy the bread already filled with ajvar, as well as a little cheese. It made for a perfect breakfast and tasted great! Here&#8217;s what it looked like after I cut it. By the way, durum flour is yellow so your bread will have a golden yellow color to it.</p>

<p>This bread is similar to <a href="http://pagach.com/">pagach</a>, which is a Slovakian stuffed bread that&#8217;s similar to  pizza. Of course, the filling is quite different, but the idea is  similar. Incidentally, I can&#8217;t wait to make traditional pagach with its cabbage filling.  Yum!!</p>
<p>Anyway, my Mediterranean stuffed bread turned out really good, and I&#8217;m looking forward to making it again, as well as experimenting with other fillings, such as minced olives and feta cheese. Doesn&#8217;t that sound great! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

It&#8217;s quite versatile because changing herbs will change the flavor of the bread, making it highly adaptable from meal to meal. It can be topped with sage, rosemary, course sea salt, onions, garlic or olives. I topped mine with olive oil, some freshly grated Parmesan cheese and Greek seasoning. The inside of the dough was filled with diced garlic and basil. <p>It was absolutely scrumptious, and it was also the perfect accompaniment to our antipasto. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>The recipe in the book doesn&#8217;t call for any yogurt to be added to the dough, although for this batch of focaccia, I did add some. There are days; however, that I make it without yogurt. I like it both ways, so if you don&#8217;t have any on-hand, don&#8217;t worry&#8230;just make your focaccia without it.</p>
<p>Here&#8217;s a couple of pictures of a batch of focaccia that I made without yogurt. I kneaded finely chopped fresh basil and freshly grated Parmesan cheese into the dough. Then I brushed the top of the bread with olive oil and added very thin slices of onions and cherry tomatoes. Doesn&#8217;t matter that the tomatoes are &#8220;oven-dried&#8221; instead of &#8220;sun-dried.&#8221; They still taste totally delicious!! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[Naan is a leavened flat bread that&#8217;s popular in many parts of the world, including India and Iran. We love both Indian and Persian cuisine, especially their flat breads. About ten years ago, Kemal and I were shopping in an Indian grocery store, and the owner was a really sweet Indian woman who was also selling some of the breads she was making. We purchased some, and I told her how much I loved her bread and that I wished I could make such wonderful Indian bread like hers. She very graciously offered to show me how to make it, and I was so excited and grateful to her for her kindness.</p>
<p>Since that time, Kemal and I have been experimenting with cooking our favorite Indian meals, and we&#8217;ve also tried making different kinds of Indian flat breads, including naan, which is very much like pita bread. Aloo naan basically means bread stuffed with potatoes and spices. You can also stuff naan with cheese, garlic, onions, peas and potatoes, and you can spice it in different ways.</p>
<p>Yesterday I made naan, and today I made aloo naan, and while Kemal and I love both, we prefer aloo naan because the potatoes and spices inside the bread add so much flavor. I prefer the bread when it comes right out of the oven, and you should have heard me oooohing and aaaaaahing this morning while I was having it for breakfast. Every bite is pure joy! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Here&#8217;s a picture of the aloo naan. The piece in the front has a little tear on it and you may be able to see the potato stuffing just a bit there. Mostly the stuffing isn&#8217;t all that visible because the potatoes are shredded and hard to see, but believe me, you can definitely feel the potato flavor on your taste buds. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

Schiacciata bread is a classic flat bread from Tuscany, and this Tuscan flat bread can be made in a variety of ways. It can be  made with roasted grapes on top. It can be stuffed with vegetables and meat, and it can also be topped with olive oil, sea salt, and fresh herbs. I topped mine with olive oil, sliced tomatoes, roasted garlic, rosemary, and sea salt.</p>
<p>The recipe I&#8217;m using for this bread comes from a wonderful book I bought some years ago. I want to eventually try every recipe in it. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />

<p>As you can see, you&#8217;re going to end up with a very large flat bread that you can enjoy with a meal, or if you&#8217;re like us, you can simply make the bread your meal. We had it for breakfast yesterday, and we ate all but the five pieces you see in the first photo. I know&#8230;I know&#8230;that&#8217;s a LOT of bread! What can I say? We were starving since we had been awake about 5 hours before eating our first meal of the day. And besides that, Kemal  is a serious bread eater! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  He loves bread more than anything else&#8230;well except me, of course. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
