It seems like around the holidays, many folks end up with a lot of leftover turkey. Here’s an interesting and tasty salad for you to try that will include some of that leftover turkey. My friend, Vesna, makes this salad, and I really enjoy it. It’s quick and easy, not to mention quite delicious. Not only is it a great salad to make when you have leftover poultry or ham during the holidays, but it’s also wonderful year-round. If you don’t have leftover turkey, roasted chicken, or ham, just use deli meat.

Vesna’s recipe calls for regular mayonnaise, but Kemal and I use a chipotle mayo that has a bit of a kick to it. Vesna also uses dill pickles in her salad, but I used the lime pickles my mom and dad make. In my opinion, the lime pickles and chipotle made the salad extra special. I just had some for breakfast this morning, and I can’t wait until I have some with my dinner tonight. It’s so yummy!
