<p>I still have some in my freezer. <p><strong>Ingredients for the Swiss Orange Banana Almond Ice Cream (No Ice Cream Maker Needed):</strong></p>
<ul>
<li> All of the ingredients listed at <a href="http://thefooddoctor.wordpress.com/2011/07/01/banana-911-spiced-banana-chocolate-jam/#comment-2163">Chef in Disguise&#8217;s recipe</a> for chocolate banana cardamom jam <em>plus</em>:</li>
<li>1 cup <em>frozen</em> banana slices</li>
<li>1 cup almond milk</li>
<li>1/4 cup semi-sweet chocolate chips</li>
<li>1 tsp. orange extract</li>
<li>1 tsp. dried orange peel</li>
<li><strong>Optional:</strong> 1 tsp. <a href="http://en.wikipedia.org/wiki/Cointreau">Cointreau</a></li>
</ul>
<p><strong>Note:</strong> Don&#8217;t add the Cointreau if you&#8217;re going to be serving this to children.</p>
<p><strong>Note:</strong> The chocolate I used when making the chocolate banana cardamom jam was 1 bar of <a href="http://www.chocolove.com/orange_peel.htm">Chocolove Orange Peel in Dark Chocolate.</a></p>
<p><strong>Instructions for Making the Swiss Orange Chip Banana Almond Ice Cream:</strong></p>
<ul>
<li>Set your frozen banana slices on the counter top and let them thaw out a little bit.</li>
<li>After they&#8217;ve thawed out some, put them in your blender along with the almond milk, chocolate chips, orange extract, orange peel, and the chilled chocolate banana cardamom jam.</li>
<li>Puree the mixture.</li>
<li>Then pour into a shallow plastic freezer container.</li>
<li>If you&#8217;re going to add in the Cointreau, this is the point where you want to do it. Just stir it into the mixture before freezing.</li>
<li>Secure the lid and freeze.</li>
<li>If you&#8217;re going to be home, you can stir the mixture every couple of hours but it&#8217;s not necessary. You can just freeze it overnight and in the morning your ice cream will be ready.</li>
<li>Just let it soften about 5 minutes and then scoop it out. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>

			<content:encoded><![CDATA[<p>I haven&#8217;t had banana bread in a while and was craving some yesterday morning for breakfast. So I made a loaf of cashew butter banana bread, and boy is it good!!</p>

<p>I adapted the recipe from <a href="http://www.joythebaker.com/blog/2011/02/peanut-butter-banana-bread/">Joy the Baker&#8217;s peanut butter banana bread</a>. The only thing I did differently was use cashew butter and chopped cashews instead of peanut butter and chopped peanuts.</p>
<p>I also made it without any granulated and brown sugar. Instead used only 1/2 cup of  <a href="http://coconutsecret.com/crystals2.html">raw coconut crystals sweetener</a> in the entire loaf. It wasn&#8217;t a sweet bread at all,  and I&#8217;m glad because I didn&#8217;t want it too sweet.</p>
<p>What was interesting is that the bread didn&#8217;t really seem to taste like cashews. The flavor of the bananas definitely came through, and while the bread definitely tasted nutty, I would have never know the nut butter in the bread was cashews. Next time I might add more chopped cashews, as well as a bit more cashew butter. Perhaps the cashew flavor will come through better that way. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[<p>Last night at work I got the shakes shortly after I clocked in, and the shakes continued almost the entire evening despite eating a very routine and normal meal for me before work&#8230;two very small pieces of <a href="http://kemalandsheila.com/2009/11/lepinje-bosnian-pita-bread/">lepinje (Bosnian flat bread)</a> with butter and a bowl of vegetable broth.</p>
<p>I guess my sugar levels had dropped, and as soon as I could, I ate a banana hoping that would would help with the shakes but unfortunately it didn&#8217;t.</p>
<p>For dinner I had an open-faced <a href="http://kemalandsheila.com/2010/06/eggplant-portobello-mushroom-sandwich/">fried eggplant sandwich</a>, and since I was still ravenous and shaky after eating that, I decided to make a high-protein dessert with natural sugars from fruit, and that seemed to do the trick because the shakes finally stopped.</p>
<p>Anyway, I normally don&#8217;t get the shakes like this so I&#8217;m curious if detoxing from processed sugar might have been a factor in my sugar level dropping. It&#8217;s possible I guess. Hopefully this won&#8217;t happen again.</p>
<p>Anyway, the cashew banana ice cream I made turned out absolutely wonderful!!</p>

<p>And this is such a versatile recipe because you can use any kind of nut butter or you can just leave out the nut butter altogether and just whip up some frozen bananas, making <a href="http://www.bing.com/search?q=one+ingredient+ice+cream&amp;form=QBLH&amp;qs=AS&amp;sk=&amp;pq=one+ingredient&amp;sp=1&amp;sc=8-14">one-ingredient ice cream</a> instead which is also quite popular.</p>
<p>If you don&#8217;t have any nut butters on hand, just throw some nuts into your blender/processor with the bananas and whip up your dessert that way. And instead of using coconut cream like I did, you can use regular cream and/or milk, coconut milk, almond milk, soy milk, or even oat milk.  You could also sprinkle the top with toasted coconut flakes, and you could also throw in some frozen strawberries instead of nuts/nut butter.</p>
<p>This is such an indulgent dessert that you can enjoy without adding any sugar.</p>

There are times in the summer when we just can&#8217;t bear the thought of turning on our oven but still want something other than fruit or ice cream for dessert. There are times we&#8217;re making a heavy meal and want a light dessert. And there are times that we really want to satisfy our sweet tooth without feeling guilty.</p>
<p>For those times, these five-minute peanut butter banana bites will do the trick.</p>

<p>Another neat thing about these peanut butter bites is that you can freeze them in a plastic container and enjoy them icy cold too without having to thaw them out. The filling freezes with the consistency of ice cream, and the pastry is soft to bite into as well. It&#8217;s nice when you can make a dessert ahead of time and have something ready when company comes over.</p>
<p>The best thing is these little bites taste great!!! They&#8217;re smooth and creamy, packed with flavor, and cool and freshing going down. And the chocolate chip on the top&#8230;well&#8230;that&#8217;s definitely the icing on the cake! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><em><strong>Sheila&#8217;s Five-Minute Peanut Butter Banana Bites</strong></em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 frozen banana</li>
<li>1/3 cup all-natural creamy peanut butter</li>
<li>1 pkg. <a href="http://parthenonfoods.com/mini-fillo-shells-athens-baked-shells-5386g-p-3711.html">Athens Mini Fillo Shells</a> (contains 15 pre-baked shells)</li>
<li>1 tbsp. raw honey</li>
<li>2 tbsp. plain yogurt</li>
<li>2 tbsp. dry vanilla pudding mix (I used the cook and serve kind and not the instant kind)</li>
<li>15 semi-sweet chocolate chips</li>
</ul>
<p><strong>Instructions:</strong></p>
<ul>
<li>Freeze a banana overnight. (If you&#8217;re like me, this step isn&#8217;t necessary because I always have frozen bananas in my freezer.)</li>
<li>Place the banana in the microwave for about 10 seconds, and then remove the banana peel with a knife. If it&#8217;s still too frozen to peel it, microwave it for another 5 seconds.</li>
<li>Remove the Athens Mini Fillo Shells from the freezer.</li>
<li>Slice the banana into quarters and then place the banana slices in a blender (or food processor).</li>
<li>Add the yogurt, honey, and peanut butter, put the lid on your blender, and then press the &#8220;food processor&#8221; button on your blender for about 10 seconds.</li>
<li>Turn the blender off, remove the lid, and  stir.</li>
<li>Repeat the same step until the banana and peanut butter have mixed together well.</li>
<li>At this point, the mixture will be a little too thin so add the dry vanilla pudding mix, blending it in for a few seconds.</li>
<li>Take a spoon and fill up each of the mini pastry shells with the peanut butter banana mixture.</li>
<li>Place a chocolate chip on top of each one.</li>
<li>Serve chilled or you can freeze them in a plastic container.</li>
</ul>

You don&#8217;t even need an old-fashioned churner, or rock salt. Nor do you need to make a custard over the stove. All you need is a blender and freezer, as well as about ten minutes of prep time.</p>
<p>This is hands-down the easiest ice cream recipe ever. Everything goes into the blender together and gets pureed for a minute or two, and that&#8217;s pretty much it.</p>
<p>Best of all, it tastes divine!!! It&#8217;s oh-so-creamy. It&#8217;s luscious. It&#8217;s fresh. And it&#8217;s perfect after an afternoon of swimming!</p>

<p>I tasted it an hour after I put it in the freezer, and it was already frozen in places, and let me tell you it was so incredibly delicious I didn&#8217;t want to put it back in the freezer to finish freezing. It&#8217;s that&#8217;s good! In fact, it&#8217;s so yummy that not only will I make this again, but I also plan to experiment and try some different flavors. About 7 months ago, however, I found the absolute best banana bread recipe ever!! <p>Every time I&#8217;ve made this bread and taken it in to work, my co-workers just rave over it. I&#8217;ve had several people ask me if I would make them an entire loaf, and I&#8217;ve had a couple of people tell me they&#8217;d pay me to make them a loaf. It definitely makes a great gift. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Believe me, the recipients are quite appreciative. <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Sometimes I&#8217;ll make a loaf for me and Kemal and then make a mini cake-sized one as a gift for someone at work. Here&#8217;s what the small cake-sized one looks like:</p>

<p>The other thing that&#8217;s great about this bread is that that you can slice it up and freeze each slice individually so you have something sweet on hand for those days when you just don&#8217;t have time to bake. It doesn&#8217;t take long at all to thaw out.</p>
<p>Okay, <a href="http://www.familyfriendlyfood.com/2009/06/banana-nut-bread-the-best-ever/">here&#8217;s</a> the banana bread recipe I found and that I want to share with you. I make my bread almost exactly the same way except for few minor things. After greasing the loaf pan with butter, I sprinkle course sugar on top of the butter.  That extra bit of sugar makes the bread extra yummy!!! <img src='http://kemalandsheila.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I also use almonds instead of walnuts, and I just mix everything in one bowl.
