Sardine Salad

Yesterday after we got home from the pool, we were both famished and needed something quick to eat so I made us a sardine salad.

If you’ve never had it before, it tastes very similar to tuna salad. It’s a tasty, protein-packed meal that takes only a few minutes to throw together. Even more satisfying was that I made the sweet pickles and pickled onions myself. (I made those the night before.)

I’ve always like to mix salty, spicy foods with something sweet, so for me, the sardine salad pairs well with the apple.

If you don’t like the idea of sardines and apple together, you can always serve the salad in a cored-out tomato.

Sardine Salad

Ingredients:

  • 1 large tin of sardines (15 oz.) in tomato sauce
  • 2 large apples, cored
  • diced sweet pickles to taste
  • diced pickled onions to taste
  • ranch dressing to taste
  • paprika to taste
  • dried dill to taste
  • Optional: 1/2 jalepeno, diced

Instructions:

  • Dice some sweet pickles and pickled onions…however much you want mixed in your sardines.
  • In a medium-sized bowl, mix together the can of sardines (undrained), the sweet pickles, onions, paprika, and ranch dressing.
  • Optional: If you want your sardine salad a little spicy, dice 1/2 of a jalepeno and add it to the mixture.
  • Core an apple.
  • Place each of the cored apples on serving plates.
  • Fill each of the cored apples with the sardine salad.
  • Sprinkle with some dried dill.
  • Garnish with more sweet pickles and pickled onions.
