Mediterranean Stuffed Flat Bread

There are so many different ways to make stuffed breads, and this Mediterranean stuffed bread that I made is adapted from a Tunisian bread recipe that I found online (www.breadbasket.com). I stuffed the bread with ajvar, which is basically like a roasted red pepper and eggplant salsa/relish, that is very popular in the Balkans. It’s also Kemal’s favorite bread spread, so I figured he would enjoy the bread already filled with ajvar, as well as a little cheese. It made for a perfect breakfast and tasted great! Here’s what it looked like after I cut it. By the way, durum flour is yellow so your bread will have a golden yellow color to it.

This bread is similar to pagach, which is a Slovakian stuffed bread that’s similar to pizza. Of course, the filling is quite different, but the idea is similar. Incidentally, I can’t wait to make traditional pagach with its cabbage filling. Yum!!

Anyway, my Mediterranean stuffed bread turned out really good, and I’m looking forward to making it again, as well as experimenting with other fillings, such as minced olives and feta cheese. Doesn’t that sound great! :)

Here’s what the bread looked like after I took it from the oven:

After they’ve cooled, use a pizza cutter to cut the bread into triangular shapes, and then eat up…warm or cold. :)
