Easy Zucchini Bread

What can I say except this recipe makes the best zucchini bread I’ve ever had. Hands down. :)

About a year or so ago, I lost many of my bookmarked favorites, including this recipe. And I didn’t print out the recipe but instead just jotted it down on a piece of paper and put it in my recipe box. If I had printed it out, the URL would have been on the paper. I wish I knew who posted this recipe, but despite all my searching I’ve come up empty. :(

But it’s such a good recipe, I have desire to try any others.

There was a manager at work who tried it once and after that he was always asking me to bring him more…which I did. He said it was his favorite bread of all time. I wish my photo would make your mouth water the way this bread does. Maybe I’ll photograph it better next time. :)

    Oh wow, I just had a bite of this zucchini bread fresh out of the oven with butter…it’s heavenly!!! I had 5 cups of zucchini and used it all in the bread and it came out just fine. When I make this again I think I’ll try substituting Splenda for the sugar. Daddy REALLY likes this zucchini bread…he said it tastes like the zucchini bread I used to make years ago, except this recipe is much easier!! Love, Mom

    hi Mom, I’m so glad you both are enjoying your zucchini bread!! :) I brought a piece yesterday to work and had it with some peanut butter on it. I know that sounds like a crazy combination but it was really good. It gave me enough energy to get me through an 11 1/2 hour work day. I like it better with butter though. :)

    That’s good to know that five cups of zucchini will work fine. Next time I make it I’ll add more like you did. Let me know how it turns out when you bake it with Splenda.

    The next time I try this recipe I’m going to sweeten it with agave nectar instead of sugar. Agave nectar is much sweeter than regular sugar so I would use less of it than I would regular sugar. But the main reason I want to try it with agave nectar is because it has a much lower glycemic value than sugar or honey. We’ll see how it turns out. I just have to get some more agave nectar at the store today. :)
