Vesna’s Blueberry Cheesecake
Ingredients:
- 1 can blueberry pie filling (or you can substitute cherry, apple, etc.)
- 1 sleeve honey graham crackers, crushed
- 2 cups sugar
- 1 sticked salted butter, melted
- 1 pkg. cream cheese
- 2 eggs
- 2 pkgs. Dream Whip
- 1 tsp. vanilla
- 1 cup milk
Instructions:
- Preheat the oven to 350 degrees.
- Crush the graham crackers.
- Melt the butter in a small pot, and then mix in graham crackers, and 1 cup sugar until the ingredients are combined.
- Spread the graham cracker mixture in a 9 x 13 inch glass pan.
- Bake for 8 minutes and remove from oven but leave the oven on.
- While the crust is baking, beat the cream cheese, 1 cup sugar, and 2 eggs with an electric mixer.
- Spread the cream cheese mixture on top of the graham cracker crust and bake for 20 minutes.
- Remove from the oven and let it cool.
- While the cake is cooling, make the Dream Whip according to the package instructions (adding milk and vanilla and beating until it forms peaks), refrigerating after it’s done.
- After the cake has cooled down, spread the fruit pie filling on top of the cream cheese mixture.
- Then spread the whipped cream on top of the fruit filling.
- Refrigerate and serve cold.
- Optional: Sprinkle with sugar crystals.
