Vesna’s Blueberry Cheesecake

I’ve been wanting to make this cheesecake for a while and decided to make it for a super-sweet gal at work who was having a birthday. It’s a fast dessert to make, and it’s so delicious and rich that you only need a few bites to satisfy your sweet tooth. It really hits the spot! :)

Vesna’s Blueberry Cheesecake

Ingredients:

  • 1 can blueberry pie filling (or you can substitute cherry, apple, etc.)
  • 1 sleeve honey graham crackers, crushed
  • 2 cups sugar
  • 1 sticked salted butter, melted
  • 1 pkg. cream cheese
  • 2 eggs
  • 2 pkgs. Dream Whip
  • 1 tsp. vanilla
  • 1 cup milk

Instructions:

  • Preheat the oven to 350 degrees.
  • Crush the graham crackers.
  • Melt the butter in a small pot, and then mix in graham crackers, and 1 cup sugar until the ingredients are combined.
  • Spread the graham cracker mixture in a 9 x 13 inch glass pan.
  • Bake for 8 minutes and remove from oven but leave the oven on.
  • While the crust is baking, beat the cream cheese, 1 cup sugar, and 2 eggs with an electric mixer.
  • Spread the cream cheese mixture on top of the graham cracker crust and bake for 20 minutes.
  • Remove from the oven and let it cool.
  • While the cake is cooling, make the Dream Whip according to the package instructions (adding milk and vanilla and beating until it forms peaks), refrigerating after it’s done.
  • After the cake has cooled down, spread the fruit pie filling on top of the cream cheese mixture.
  • Then spread the whipped cream on top of the fruit filling.
  • Refrigerate and serve cold.
  • Optional: Sprinkle with sugar crystals.
