Eggplant Parmesan Stacks with Prosciutto

This is the best eggplant Parmesan I’ve ever had. The smoked prosciutto gives it a beautiful smell and taste without overpowering the subtle eggplant flavor. I enjoyed every single bite, and I’m hardly waiting for leftovers tonight! :) Thanks to Lesley at Keeping Food True for such a great recipe!! I’ll definitely be making this eggplant Parmesan again and again! :)
