Banana Cranberry Pumpkin Seed Bread

I usually eat my first meal of the day between 1 and 2 p.m. I like to keep it simple, and most generally I have 2 slices of bread with butter. For the past several months, I’ve been eating Yoga bread for breakfast. I love it because it’s sweet without being too sweet, nutty, and delicious. It also doesn’t make me feel heavy after eating it. Best of all, it’s great for my digestive system. It’s way better than eating prune juice for breakfast if you know what I mean! :)

Anyway, when we went to Whole Foods a few days ago to pick up our groceries, there was no Yoga bread on the shelf. Needless to say, I wasn’t happy. There was also no tag on the shelf, so I’m thinking they’ve probably discontinued the product. So now I’m trying to figure out what to eat for breakfast until I learn how to make a bread similar to the Yoga bread I’ve been eating.

My quest for the perfect breakfast bread begins. I want my breakfast bread to have seeds and fruit in it. I want it to have whole grains and not a lot of sugar. I especially want it to be high in fiber. I know it may take me some time to find just the right bread, but in the meantime, I’m going to enjoy the journey and all the yumminess along the way. :)

The bread I made this morning is my first attempt at finding the one. I can’t begin to tell you how much my mouth was watering when I smelled the bread baking in the oven, and I wasn’t at all disappointed when I sampled a slice covered in butter. Oh man…it was pure joy! Seriously! And thanks to Joy the Baker for the recipe!! I made a few changes…just added some pumpkin seeds, and I also added extra vanilla, butter, and sugar. Uh…did I say I wanted a bread low in sugar? My bad…I just couldn’t help myself! :)

The bread was very satisfying and didn’t leave me feeling heavy after I ate it. I loved the sweet combined the slightly sour cranberries, and the pumpkin seeds added a lovely texture to the soft bread. This one is definitely a hit! :)
