Sweet Potato Balls
Thanksgiving night I was trying to decide what kind of sweet potato dessert to make with the sweet potatoes Jenny gave me. There were so many wonderful choices to choose from…sweet potato pie, sweet potato pecan pie, sweet potato cupcakes, sweet potato cookies, sweet potato muffins, and sweet potato bars. I ended up deciding to make sweet potato balls because warm, melted marshmallows wrapped in sweet potatoes sounded so heavenly! They tasted just as yummy as I imagined they would!!

Cooking Note: Watch the balls carefully the last few minutes of cooking because the balls can burst open as the marshmallows plump up. I was busy talking to my sister on the phone and a few of them did pop open as you can see here:

All that ooey-gooey marshmallow inside though is scrumptious, and I didn’t mind if a few of them burst. I promptly ate a couple of them so the evidence was destroyed! LOL!
