Russian Salad

It seems like around the holidays, many folks end up with a lot of leftover turkey. Here’s an interesting and tasty salad for you to try that will include some of that leftover turkey. My friend, Vesna, makes this salad, and I really enjoy it. It’s quick and easy, not to mention quite delicious. Not only is it a great salad to make when you have leftover poultry or ham during the holidays, but it’s also wonderful year-round. If you don’t have leftover turkey, roasted chicken, or ham, just use deli meat. :)

Vesna’s recipe calls for regular mayonnaise, but Kemal and I use a chipotle mayo that has a bit of a kick to it. Vesna also uses dill pickles in her salad, but I used the lime pickles my mom and dad make. In my opinion, the lime pickles and chipotle made the salad extra special. :) I just had some for breakfast this morning, and I can’t wait until I have some with my dinner tonight. It’s so yummy! :)

Russian Salad

Ingredients:

  • 1 can peas and carrots
  • lime pickles (can substitute with 6 or 7 dill pickles)
  • 3-4 hard boiled eggs, diced
  • turkey meat, chopped into small pieces
  • chipotle mayonnaise (to taste)
  • salt to taste

Instructions:

  1. Boil the eggs until they’re hard-boiled, and them slice them into small pieces.
  2. Dice your pickles. It’s up to you how much you want to put in your salad.
  3. Chop the meat into small pieces. (It’s up to you how much you want to include in your salad.)
  4. Drain the can of peas and carrots.
  5. Mix everything together, adding mayonnaise and salt at the end.
