Leroy's Crockpot Soup Beans

I love soup beans…doesn’t matter what kind…navy, pinto, or Great Northern, but what annoys me about making them is having to “babysit” the stove for several hours while the beans are cooking. My brother, Leroy, gets around that by making his soup beans in the crock pot. That’s such a great idea, and I can’t believe I never thought to make them like that. From now on, I’m going to make my soup beans in the crock pot to save time.

Sometimes my brother uses ham hocks or ham bones in his soup beans and other times he uses bacon. I’m going to give you the recipe for making it with bacon since that’s how I prefer it. :)

Leroy’s Crockpot Soup Beans

Ingredients:

  • dried beans of your choice (I used Great Northern beans)
  • water
  • bacon
  • salt
  • pepper
  • Optional: potatoes
  • Optional: onion

Instructions:

  • Optional: You can soak your beans in water for two hours prior to putting them in the Crockpot.
  • Fry your bacon very crispy, and when it cools, crumble it up into small pieces. Save the grease. You can add the crumbled bacon to your beans or you can top your bowl of beans with it.
  • If you want to add potatoes and onions to your bean soup, wash them and cut them into small pieces. I leave the skins on my potatoes, and I used green onions.
  • Put your beans, potatoes, and onions in the Crockpot and then cover them with water. I’d fill up the Crockpot with water until almost two-thirds of the pot is full.
  • Add the bacon grease, salt and pepper to the water and beans.
  • Put the lid on the Crockpot and cook on high for about one hour.
  • Then, turn the heat down to low and cook overnight.
  • When the beans are done and in the bowl, you can serve them plain or you can take some crumbled bacon and sprinkle it on top of your bowl of beans. I like to dice up an onion and put plenty of diced onion on top of my bowl of beans as well. :) As you can see in the photo, the beans are hidden under all the toppings. :( Oops! But believe me all that bacon and onions match perfectly with the beans!! :)
